Trail Mix Cookies
- 1/2 sticks Unsalted Butter, Softened
- 1/4 cups Vegetable Shortening
- 1/2 cups Brown Sugar, Firmly Packed
- 1 whole Egg
- 1/2 teaspoons Baking Soda, Dissolved In 1 Tablespoon Water
- 1/2 cups Plus 2 Tablespoons, All-purpose Flour
- 1/2 teaspoons Kosher Salt
- 1/2 teaspoons Pure Vanilla Extract
- 1-1/2 cup Old Fashioned Rolled Oats
- 1/2 cups Sweetened Flake Coconut
- 6 ounces, weight Semi-Sweet Chocolate Chips
- 1/3 cups Roasted Peanuts
- Preheat oven to 375 degrees.
- In a bowl, cream the butter and the shortening with the sugar. Slowly beat in the egg, the baking soda mixture, flour, salt and vanilla. Stir in the oats, coconut, chocolate chips and peanuts. Dough will be sticky!
- Drop rounded tablespoonfuls of the dough about 4 inches apart onto a baking stone and flatten with your fingers to approximately 3 inches in diameter. Bake on a rack set in the middle of the oven about 10-12 minutes or until golden. Transfer to a metal rack to cool.
