Trail Mix Cookies

  1. Preheat oven to 375 degrees.
  2. In a bowl, cream the butter and the shortening with the sugar. Slowly beat in the egg, the baking soda mixture, flour, salt and vanilla. Stir in the oats, coconut, chocolate chips and peanuts. Dough will be sticky!
  3. Drop rounded tablespoonfuls of the dough about 4 inches apart onto a baking stone and flatten with your fingers to approximately 3 inches in diameter. Bake on a rack set in the middle of the oven about 10-12 minutes or until golden. Transfer to a metal rack to cool.
  4. Enjoy!
