Apple Coffee Cake(Kosher)
- 1 (21 oz.) can apple pie filling
- 2 tsp. ground cinnamon
- 3 c. flour
- 1 c. sugar
- 1 1/2 c. milk
- 1/2 c. margarine, softened
- 3 tsp. baking powder
- 1 tsp. salt
- 3 eggs
- 1/2 c. packed brown sugar
- 1/4 c. coarsely chopped nuts
- 2 Tbsp. margarine, melted
- Heat oven to 350u0b0.
- Grease 13 x 9 x 2-inch pan.
- Mix pie filling and cinnamon; reserve.
- Beat flour, sugar, milk, softened margarine, baking powder, salt and eggs in large bowl on low speed, about 30 seconds.
- Beat at medium speed (2 minutes).
- Pour 1/2 of batter (about 2 cups) into pan.
- Spoon 1/2 of pie filling (about 1 cup) over batter in pan.
- Repeat with remaining batter and pie mixture.
- Sprinkle brown sugar and nuts over top of pie filling mixture; drizzle with melted margarine.
- Bake until wooden toothpick inserted in the center comes out clean, about 45 to 50 minutes.
- Serve warm.
- Makes 12 to 16 servings.
