Quinoa With Broccoli And Pine Nuts
- 1 cup Quinoa (dry)
- 1 cup Chopped Fresh Broccoli
- 3 cloves Garlic, Crushed Or Minced
- 2 cups Water
- 1 dash Soy Sauce
- 1/2 cups Pine Nuts, Lightly Toasted
- 1 bunch Chopped Green Onions (white Part Only)
- 1 Tablespoon Chopped Fresh Cilantro (or 1/2 Tbsp. Dried)
- 2 Tablespoons Apple Cider Vinegar
- 1 Tablespoon Olive Oil
- Saute garlic in a very small amount of olive oil. Place quinoa, broccoli, garlic and water in a sauce pan, cover, and bring to a boil. Season with a splash of soy sauce, cover, and reduce heat to low. Simmer until all liquid has been absorbed and quinoa has opened up (about 15 minutes).
- Gently fold in pine nuts, green onions, garlic, cilantro, vinegar and olive oil. Season with salt and pepper to taste. Transfer to a serving bowl and serve immediately.
