Raisin Applesauce Cake(Diabetic)
- 2 c. raisins
- 2 c. water
- 1 1/2 c. unsweetened applesauce
- 3 eggs
- 1 c. cooking oil
- 1/4 c. plus 1 Tbsp. Sweet 'N Low
- 1 1/2 c. frozen fruit (of your choice)
- 3 c. self-rising flour
- 2 Tbsp. cinnamon
- 2 Tbsp. vanilla
- 1/4 tsp. soda
- 1 c. nuts, chopped
- Cook raisins in water on high until all water is gone.
- Do not scorch.
- In large mixing bowl mix applesauce, eggs, oil and sweetener.
- Mix well.
- Sift flour, soda and cinnamon together. Add raisins.
- Then add vanilla and flour, cinnamon and soda mixture.
- Blend together.
- Add fruit and nuts.
- Stir well with spoon.
- Pour into a well-greased and floured Bundt pan or tube. Cook at 350u0b0 for 40 to 45 minutes or until done.
- Test with toothpick for doneness.
- It will be moist.
