Chilaquiles, Antidote To Whateva Ails You
- 2 whole Eggs
- 1/2 cups Corn Tortilla Chips
- 2 Tablespoons Salsa
- 2 Tablespoons Milk
- Recently hungover? A mother of a new baby? Dog tired? Recovering from a grueling workout with your training partner that threw you all over the mat like a rag doll? Here's the answer, darlings. Utterly simplistic, just 4 ingredients, cooks in a flash, and will utterly fix your short-term hunger issues.
- *First off, I know this can be made a lot of different ways, and I know that chilaquiles often have potatoes, sometimes cheese and occasionally peppers or chiles. This is just how it was served to me on an entirely too-early morning many many years ago and it stuck. So call it migas if you want to, but call it divine intervention when you are hungry.
- Get ready: 2 eggs, beaten in a small bowl with a dash of milk splashed in, 1 handful of lightly crushed tortilla chips, and the salsa jar at the ready (get your spoon in there, honey!).
- This is ideal for when you are recovering from anything because if you're super hungry, it'll take you only 5 minutes or less from the time you crack that first egg until you're shoveling sweet chilequiles into your mouth. If you're inebriated though, it might take you a few more minutes.
- 1. Warm up your skillet to medium-high (or a 7, in our house).
- 2. When its hot, spray the pan and then put in your eggs. Scramble them.
- 3. When they are ALMOST done, add in your crushed tortilla chips until they are integrated.
- 4. Turn off the burner, and add in 1-2 spoonfuls of your salsa, mix it in just a bit and then put it on your plate.
- 5. Get yourself some more chips, grab some OJ and sit down to eat!
