Frosted Mint Bars
- FOR THE BARS:
- 1 cup Sugar
- 1/2 cups Softened Butter
- 1 teaspoon Vanilla
- 2 whole Eggs
- 2/3 cups Flour
- 1/2 cups Cocoa
- 1/2 teaspoons Baking Powder
- 1/2 teaspoons Salt

- FOR THE FROSTING:
- 1-1/2 cup Powdered Sugar
- 1/4 cups Butter, Softened
- 1/8 cups Milk
- 1/4 teaspoons Peppermint Extract
- 3 drops Green Food Coloring
- 1 ounce, weight Baking Square Unsweetened Chocolate
- 1. Mix sugar, butter, vanilla, and eggs. Add the remaining bar ingredients. Stir until creamy.
- 2. Pour into a greased 8x8 inch pan. Bake at 350 degrees F for 25 minutes. Let cool.
- 3. Frosting: Mix powdered sugar with butter. Then add milk and peppermint extract and mix (may need less milk or more powdered sugar, just mix to desired consistency). Add 3 drops of green food coloring (or to desired green color). Spread over brownies once they are cool. Refrigerate for 15 minutes.
- 4. Melt square of unsweetened chocolate (you can do this in a saucepan over low heat or in the microwave, heating 30 seconds at a time until melted) and then drizzle over bars.
