Frosted Mint Bars

  1. 1. Mix sugar, butter, vanilla, and eggs. Add the remaining bar ingredients. Stir until creamy.
  2. 2. Pour into a greased 8x8 inch pan. Bake at 350 degrees F for 25 minutes. Let cool.
  3. 3. Frosting: Mix powdered sugar with butter. Then add milk and peppermint extract and mix (may need less milk or more powdered sugar, just mix to desired consistency). Add 3 drops of green food coloring (or to desired green color). Spread over brownies once they are cool. Refrigerate for 15 minutes.
  4. 4. Melt square of unsweetened chocolate (you can do this in a saucepan over low heat or in the microwave, heating 30 seconds at a time until melted) and then drizzle over bars.
