Green Bean Almondine
- 2 pounds Fresh String Beans, Cleaned, Cooked Tender
- 6 strips Bacon, Crisply Cooked, Fat Reserved
- 1/4 cups Olive Oil
- 1 whole Small Onion, Chopped Small
- 3 cloves Garlic, Chopped Small
- 8 whole Mushrooms, Halved, Then Sliced
- 1 whole Small Red Bell Pepper, Chopped Small
- 1/8 cups Parsley, Chopped
- 1/2 cups White Cooking Wine
- 1 cup Chicken Broth
- 1/4 cups Slivered Almonds
- Salt
- Beans: trim and remove strings if you choose, then wash them. Cook beans until they are crisp-tender. Drain and set aside.
- Cook bacon and reserve fat.
- In a deep pan or pot, add olive oil. Once hot, add the onion and saute for a little bit. Now add garlic and simmer until the onions are clear.
- Add the mushrooms, red bell pepper and parsley. After 5 minutes of simmering, add cooking wine, chicken broth and some of the reserved bacon fat. Cook until desired taste or when some of the liquid steams away. Add salt to taste.
- Remove liquid mixture from the stove, add the string beans, almonds and crumbled bacon. Mix well and put in a serving dish. Enjoy!
