Stuffins – Thanksgiving Leftover Muffins
- 1-1/2 cup All-purpose Flour
- 2 Tablespoons Cornmeal
- 2 Tablespoons Sugar
- 1/2 teaspoons Salt
- 2 teaspoons Baking Powder
- 1/3 cups Vegetable Oil
- 1 Egg
- 1/2 cups Milk
- 2 cups Leftover Stuffing
- 1. Preheat over to 400u0b0F. Coat muffin tin with vegetable oil.
- 2. Mix flour, cornmeal, sugar, salt, and baking powder until evenly mixed.
- 3. Add oil, egg, and milk and mix until the mixture is smooth but slightly sticky.
- 4. Fill each muffin cups 2/3 full with batter.
- 5. Fill to top with stuffing, making sure to press into the batter.
- 6. Bake for 20-25 minutes until tops are golden brown and stuffing is crispy.
- 7. Use a knife and go around each muffin cup, pop out and enjoy!
