Triple Chocolate Mocha Cappuccino Cookies

  1. Preheat oven to 350u0b0F.
  2. In a large bowl or the bowl of a stand mixer combine the Mocha Cappuccino spread, shortening, brown sugar, milk and vanilla. Beat at medium speed using an electric or stand mixer until well blended. Then add egg and blend again. Set aside.
  3. In a separate bowl blend together the flour, cocoa, baking soda and salt. Add this dry mixture to the wet mixture and mix on low speed.
  4. Slowly add the oats and chocolate chips until all is well blended.
  5. Using a medium cookie scoop, drop the balls of dough onto a greased cookie sheet about 2 inches apart.
  6. Bake for 8 minutes. Then remove the cookie sheet from the oven and let cookies cool on cookie sheet for 2 minutes before removing them and placing them on a cooling rack.
