Orange Pecan Squares
- 1 c. softened unsalted butter
- 1/2 c. packed brown sugar
- 2 1/3 c. flour
- 1/2 tsp. each: cinnamon and nutmeg
- 1 1/2 c. chopped pecans
- 4 large eggs
- 2 c. granulated sugar
- 1/3 c. orange juice
- ground rind of 1 orange
- 1 tsp. baking powder
- 2 Tbsp. confectioners sugar
- Heat oven to 350u0b0.
- Cream butter and brown sugar in large bowl until light and fluffy.
- Add 2 cups of flour, cinnamon and nutmeg. Add pecans and mix to blend.
- Press evenly over well-greased 13 x 9-inch baking pan.
- Bake until lightly browned at edges, about 20 minutes.
- Beat eggs until light and fluffy.
- Gradually add granulated sugar until thick and well blended.
- Add orange juice, orange rind, remaining 1/3 cup flour and baking powder; mix to blend.
- Pour orange mixture over baked crust and return to oven and bake until golden brown, 25 to 30 minutes.
- Remove from oven. Sprinkle with confectioners sugar.
- Cool and cut in squares.
