Chipotle Baked Beans
- 1 can Chipotles In Adobo
- 1 whole White Onion, Chopped
- 2 whole Cloves Of Garlic, Chopped
- 1 Tablespoon Olive Oil
- 2 teaspoons Chile Powder
- 1/2 pounds Bacon, cut into 1-inch pieces
- 1/2 cups Ketchup
- 1/2 cups Beer (or Water)
- 1/4 cups Dark Brown Sugar
- 1 teaspoon Dry Mustard
- 3 cups Great Northern Beans, Cooked
- Open the can of chipotles; take 3 out, remove stems and chop. Take 2 Tbsp of adobo sauce from the can and set aside. In a dutch oven or other sturdy pan, saute the chipotles, onions and garlic in the olive oil until soft. Combine all other ingredients in the pan and stir gently until combined.
- Bake at 325 degrees for 2 hours. Check occasionally and add water if beans become too dry.
