Italian Herb Grain Bowl
- FOR THE GRAIN BOWL:
- 2 cups Cooked Wheat Bulgur
- 3 cups Cooked Or Canned Chickpeas
- 1/4 Red Onion, Diced
- 1 Cucumber, Sliced
- 1/2 Red Bell Pepper, Diced
- 6 Radishes, Sliced
- 1/2 cups Olives, Sliced
- 1 can (14 Oz. Size) Artichoke Hearts, Drained And Chopped
- 1 Avocado, For Garnish
- FOR THE DRESSING:
- 6 Tablespoons Olive Oil
- 2 Tablespoons Apple Cider Vinegar
- 2 Tablespoons Prepared Dijon Mustard
- 1/2 teaspoons Basil
- 1/2 teaspoons Marjoram
- 1 Tablespoon Lemon Juice
- 1 clove Garlic, Grated
- 1/4 teaspoons Salt
- 1/4 teaspoons Black Pepper
- Combine all ingredients for the grain bowl and mix gently.
- In a bowl, whisk all dressing ingredients together. Pour over grain bowl and stir gently to coat.
