Tuna And Avocado Salad
- FOR THE DRESSING:
- 1/2 whole Lemon, Juice Only
- 2 Tablespoons Olive Oil
- 1 teaspoon Black Pepper
- FOR THE SALAD:
- 1 can (5 Oz. Size) Tuna
- 1 whole Red Onion, Finely Chopped
- 2 whole Avocados, Peeled And Cut Into Bite Size Pieces
- 1 can (15 Oz. Size) Chickpeas
- 2 ounces, weight Spinach
- 2-1/2 ounces, weight Mixed Salad Leaves
- 1/2 ounces, weight Parsley, Roughly Chopped
- This recipe couldn't be any more simple. Start by mixing lemon juice, olive oil and black pepper together in a small jug. This is your dressing.
- Throw salad ingredients into a bowl and toss. If you're serving the same day, place in a large salad bowl and drizzle some of your salad dressing over it. If you're making this up for a later day, store in containers and add the salad dressing when you're ready to eat!
