Pasta And Walnut Fruit Salad
- 8 oz. medium pasta shells, uncooked
- 8 oz. nonfat plain yogurt
- 1/4 c. frozen orange juice concentrate, thawed
- 1 can mandarin oranges (in juice), drained (15 oz.)
- 1 c. seedless red grapes, halved
- 1 c. seedless green grapes, halved
- 1 apple, cored and chopped
- 1/2 c. sliced celery
- 1/2 c. walnut halves
- Prepare shells according to package directions.
- Drain.
- Blend yogurt and orange juice concentrate in a small bowl.
- Combine shells and remaining ingredients in a large bowl.
- Add yogurt mixture.
- Toss gently to coat.
- Cover and refrigerate until chilled thoroughly.
- Nutrients per serving:
- 217 calories, 6 g fat, 1 mg cholesterol and 44 mg sodium.
