Empanadas Dulces (Sweet Hand Pies)
- 2 pounds, 3-1/3 ounces, weight All-purpose Flour
- 1/2 teaspoons Salt
- 1/2 cups Sugar
- 1-1/2 teaspoon Baking Powder
- 1 pound, 1-2/3 ounces, weight Shortening
- 12 ounces, fluid Beer (Heineken)
- 2 cups Jam
- 1 cup Sugar
- 1 Tablespoon Cinnamon
- Preheat oven to 350u0b0F.
- In a bowl add the flour, salt, sugar, baking powder and shortening, and cream together. Then add the beer a little at a time until the mixture starts forming a ball. Let it rest for about 15-20 minutes covered in plastic wrap.
- Now roll out the dough so that you can cut circles out of it. Cut out whatever sized circles you prefer. Into the middle of each circle, add a little bit of jam (I used fig jam). Then fold the dough circle in half, press edges together and crimp the edges with a fork. Place the assembled pies in a Pyrex dish.
- Bake the empanadas until golden, 15 to 20 minutes.
- When done, remove them from the oven and immediately roll them in sugar and cinnamon.
- Transfer to a wire rack and let cool. Serve warm or at room temperature.
- You can fill them with any jam you want.
