Summer Pasta Salad
- 2 boxes Bowtie Pasta (16 Oz Boxes)
- 3 cups Grapes
- 3 cups Chopped Celery
- 1 can Pineapple Chunks (20 Oz)
- 2 cans Mandarin Oranges (11 Oz Cans)
- 1 bag Craisins (12 Oz)
- 1-1/2 cup Cashews, Divided Use
- 1 cup Mayonnaise
- 1 jar Coleslaw Dressing (Refrigerated, 12 Oz Jar)
- While pasta is boiling, prepare the following:
- Slice grapes in half, slice celery into bite-sized pieces. Combine pineapple, mandarin oranges, Craisins, celery, grapes and 1/2 cup cashews in bowl.
- Add the cooked & drained pasta.
- Add mayonnaise and coleslaw dressing (found in produce aisle of grocery store).
- Stir everything well. Add remaining 1 cup of cashews right before serving.
- This salad is best if it sits overnight. It goes a long way. You can also add chicken breast to this if you'd like.
