Indian Corn Rice

  1. Start cooking rice.
  2. Prepare all veggies, and if using, chicken.
  3. In a large skillet, heat oil. If using chicken, cook now and remove to a plate.
  4. Add onion and carrots, stir-fry.
  5. Once onions begin to turn translucent, add corn and cashews. Toast lightly.
  6. When ready, add chilis/jalapenos and cilantro. Heat through.
  7. Add spices and mix thoroughly.
  8. Add rice and mix again.
  9. Take off heat and stir in green onions immediately before serving.
