Indian Corn Rice
- 1 cup Uncooked Rice
- 2 pieces Chicken Breast Cubed (optional)
- 1 cup Sliced/chopped Onion
- 1 cup Corn
- 1 cup Thinly Sliced Carrots
- 1 cup Slice Green Onions (scallions)
- 1 cup Chopped Fresh Cilantro
- 1 cup Cashews
- 1 can Diced Mild Green Chilis/jalapenos (small Can, Drained)
- 1 Tablespoon Sesame Oil
- 1 Tablespoon Ground Turmeric
- 1 teaspoon Ground Coriander
- 1 teaspoon Ground Cumin
- 1/4 teaspoons Ground Cinnamon
- 1 dash Ground Clove
- Salt And Black Pepper To Taste
- Start cooking rice.
- Prepare all veggies, and if using, chicken.
- In a large skillet, heat oil. If using chicken, cook now and remove to a plate.
- Add onion and carrots, stir-fry.
- Once onions begin to turn translucent, add corn and cashews. Toast lightly.
- When ready, add chilis/jalapenos and cilantro. Heat through.
- Add spices and mix thoroughly.
- Add rice and mix again.
- Take off heat and stir in green onions immediately before serving.
