Blueberry Orange Muffins
- 1 cup Quick Cooking Oats
- 1 cup Orange Juice
- 1 teaspoon Orange Zest
- 1 cup Vegetable Oil
- 3 whole Eggs, Beaten
- 3 cups Flour
- 1 cup Sugar
- 4 teaspoons Baking Powder
- 1 teaspoon Salt
- 1/2 teaspoons Baking Soda
- 2 cups Blueberries
- 1/2 cups Pecans, Chopped
- 3 Tablespoons Brown Sugar
- 1/2 teaspoons Cinnamon
- Preheat oven to 400u0b0F. In a medium sized bowl combine oats, orange juice and zest; mix in oil and eggs then set the bowl aside.
- In a large bowl stir together flour, sugar, baking powder, salt and baking soda. Add oat mixture and mix lightly. Fold in blueberries.
- Spoon batter into a paper-lined 12-count standard size muffin tin, filling each liner 2/3 full. Combine pecans, brown sugar and cinnamon in a small bowl then sprinkle this over the batter in each cup. Bake at 400u0b0F for about 15-18 minutes or until lightly browned.
