Caribbean Fudge Pie
- 1/4 c. margarine
- 3/4 c. firmly packed brown sugar
- 3 eggs
- 1 pkg. semi-sweet chocolate, melted
- 2 tsp. instant coffee
- 1 tsp. rum extract or 1 Tbsp. dark rum
- 1/4 c. flour
- 1 c. chopped walnuts
- 1 unbaked 9-inch pastry shell
- 1/2 c. walnut halves or pieces
- Heat oven to 375u0b0.
- Beat in large bowl the margarine and sugar until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Add chocolate, coffee and rum extracts; mix well.
- Stir in flour and chopped walnuts.
- Pour into pastry shell. Decorate top of pie with walnut halves.
- Bake in lower third of oven 25 minutes.
- Cool on wire rack.
- Refrigerate at least 1 hour or until ready to serve.
- Makes 10 servings.
