Twice Baked Potaotes

  1. Bake 4 large Baking potatoes at 400 degrees for 30 minutes and let cool enough to handle by hand. Once cooled, cut each potato in half lengthwise and scoop out the inside of each potato inside a large mixing bowl, being careful not to tear the skin. To the bowl, add the grated white cheddar cheese, heavy cream, unsalted butter, a handful of chives chopped finely, kosher salt and freshly ground black pepper. After all ingredients have been mixed well together, scoop the mixture back into the potato skins and bake for 7 to 10 minutes or until the cheese has melted and the potatoes are nicely browned.
  2. Top with sour cream and a few chives and serve! There's one toppings I didn't add to this potato: BACON! Maybe next time. Enjoy.
