Cheesy Potato Soup
- 4 whole Potatoes, Peeled And Diced
- 2 cups Water
- 1/4 cups Onion, Diced
- 1/2 teaspoons Salt
- 1/4 teaspoons Pepper
- __
- 1/4 cups Butter
- 1/4 cups Flour
- 2 cups Milk
- 2 cups 8(oz) Mild Cheddar Cheese Shredded
- 1/2 packages Bacon, Cooked And Crumbled
- 3 stalks Green Onion, Diced (optional)
- In a large sauce pan, combine the first 5 ingredients; bring to a boil.
- Reduce heat; cover & simmer until potatoes are tender (about 17 minutes). Reduce heat to low & let it set .
- In another sauce pan, melt the butter over medium heat; whisk in the flour until smooth.
- Gradually add milk; bring to a boil. Cook & stir for 2 minutes, or until thickened.
- Add cheese to milk mixture & stir until melted. Add mixture to the potato pot & stir to combine.
- Add crumbled bacon & stir to combine. Serve with sour cream & green onions as garnish.
