Cheesy Potato Soup

  1. In a large sauce pan, combine the first 5 ingredients; bring to a boil.
  2. Reduce heat; cover & simmer until potatoes are tender (about 17 minutes). Reduce heat to low & let it set .
  3. In another sauce pan, melt the butter over medium heat; whisk in the flour until smooth.
  4. Gradually add milk; bring to a boil. Cook & stir for 2 minutes, or until thickened.
  5. Add cheese to milk mixture & stir until melted. Add mixture to the potato pot & stir to combine.
  6. Add crumbled bacon & stir to combine. Serve with sour cream & green onions as garnish.
