Sweet Potato Honey Rolls

  1. Dissolve yeast in 1/4 cup water.
  2. Heat remaining 1/4 cup water, sugar, 3 tablespoons butter and salt in small pan.
  3. Cool to lukewarm.
  4. Add eggs, sweet potatoes and vanilla.
  5. Combine 1 1/4 cups flour, yeast and sweet potato mixture in mixing bowl.
  6. Beat at low speed for 1/2 minute.
  7. Then beat on high for 2 minutes, scraping sides of bowl.
  8. By hand, stir in enough remaining flour to make a moderate stiff dough.
  9. Knead until smooth and elastic (about 8 minutes).
  10. Place in greased bowl, turning dough to grease top.
  11. Cover and let rise until almost double (about 1 hour).
