Banana Nut Pancakes
- 2 whole Large Bananas
- 3-1/2 cups Pancake Mix
- 3 cups Water
- 5 Tablespoons Melted Butter, Plus More For Griddle
- 1 Tablespoon Vanilla Extract
- 1/2 teaspoons Cinnamon
- 1/4 teaspoons Nutmeg
- 1 Tablespoon Sugar
- 2 Tablespoons Light Brown Sugar
- 1/2 cups Chopped Walnuts
- Sliced Bananas, Candied Walnuts, And Maple Syrup, To Serve
- Place bananas in a medium-sized bowl and, using a potato masher, mash bananas.
- In a separate bowl, add pancake mix and water, whisk until smooth. Add butter, vanilla, cinnamon, nutmeg, sugar, brown sugar, and mashed bananas and whisk until well combined. Fold in the walnuts.
- Heat a griddle to 350u0b0F. Melt a tablespoon of butter and pour pancake batter onto griddle using a 1-cup measuring cup. Cook for 3-5 minutes on one side until craters begin to form. Flip and cook on the other side for and additional 2-3 minutes. Continue until all batter is cooked.
- Serve with banana slices, candied walnuts, and maple syrup.
