Chunky Monkey Baked Oatmeal Cups
- 2 cups Oats
- 1 Tablespoon Brown Sugar
- 1 teaspoon Cinnamon
- 1 pinch Nutmeg
- 1/4 teaspoons Salt
- 1 cup Mashed Bananas
- 2/3 cups Milk
- 2 Large Eggs
- 2 Tablespoons Oil
- 1/4 cups Liquid Honey
- 1/3 cups Dark Chocolate Chips
- 1/3 cups Chopped Walnuts
- Preheat oven to 400u0b0F. Grease a 12-cup muffin tin.
- Whisk oats, brown sugar, cinnamon, nutmeg (if using) and salt in a large bowl.
- Whisk together all remaining ingredients (except chocolate chips and walnuts) in a large measuring jug. Pour wet into dry ingredients, stir well and fold in chocolate chips and walnuts.
- Divide mixture between muffin cups, gently shake them to level out. Either cover and refrigerate overnight or bake right away for 20 minutes or until the top is golden brown.
