Flourless Paleo Banana Chocolate Muffins
- 2 whole Medium Eggs
- 4 Tablespoons Cocoa Powder
- 2 Tablespoons Sweetener Of Your Choice (optional)
- 1 whole Ripe Banana, Mashed
- 5 Tablespoons Tahini (or Another Nut Butter Of Your Choice)
- 1 teaspoon Baking Soda
- 1/4 cups Chocolate Chips Or Chopped Chocolate (optional)
- Chopped Hazelnuts (optional)
- Preheat oven to 170u0b0C (325u0b0F).
- Whisk eggs thoroughly-the fluffier, the better. You can use a mixer, but I do it by hand: it's great exercise.
- Add cocoa powder and sweetener of your choice (if needed) and give it a good mix. Add mashed banana and tahini and mix again. Add baking soda and mix everything together. If desired, add chopped dark chocolate (or chocolate chips) and chopped hazelnuts. I reserved some hazelnuts for decoration.
- Pour the mixture into muffin molds and bake for 18-20 minutes. Let cool and enjoy.
