Marinated Veggie Salad
- 3/4 c. sugar
- 1/2 c. oil
- 1/2 c. vinegar
- salt and pepper to taste
- 1 small bell pepper, chopped fine
- 4 green onions, chopped fine
- 1 can French-style green beans, drained
- 1 can whole kernel corn, drained
- 1 can sliced green beans, drained
- 1/2 c. chopped carrots
- add any combination according to taste: chopped celery (about 1/2 c.); broccoli (1 c. chopped fine) and/or cauliflower (1 c. chopped fine)
- Mix sugar, oil, vinegar, salt, pepper, bell pepper and green onions.
- Add French-style green beans, corn, sliced green beans and carrots.
- Add combination of celery, broccoli and cauliflower.
- Put in a large covered dish.
- Refrigerate overnight.
- Serve cold. Serves 10 to 12.
