Delicious Cakey Coconut Brownies (Flourless)
- 12 whole Dates
- 2 Tablespoons Coconut Oil
- 2 whole Eggs
- 1/4 cups Cocoa Powder
- 4 Tablespoons Tahini
- 1/2 cups Desiccated Coconut
- 4 Tablespoons Flax Meal
- 1/2 teaspoons Baking Soda
- Preheat oven to 180u0b0C (350u0b0F).
- Soak dates in warm water for about 1/2 hour or until they are soft enough to mash them with a fork. I like adding the coconut oil to the dates and keep mashing until I have a smooth paste.
- Whisk eggs with cocoa powder. Add date paste and tahini and mix again.
- Lastly, add desiccated coconut, flax meal and baking soda. Mix everything thoroughly.
- Grease brownie pan or cover it with baking paper. Pour in the mixture bake for 18-20 minutes. Check for doneness with a toothpick.
- Let the brownie cake cool down, cut and enjoy!
