Unusual Banana Nut Bread
- 1-1/2 cup Flour
- 1 teaspoon Baking Soda
- 1 teaspoon Salt
- 1/2 teaspoons Cinnamon
- 1 cup Mashed Bananas
- 1/2 cups Mayonnaise
- 1 cup White Sugar
- 1 cup Walnuts Or Pecans, Chopped
- Preheat oven to 375 F.
- 1. Sift flour, baking soda, salt and cinnamon together.
- 2. Using 3-4 bananas (depending on size), mash the bananas and mix in mayonnise and sugar.
- 3. Mix in dry ingredients 1/2 cup at a time.
- 4. Add nuts and stir to incorporate.
- 5. Pour into a greased bread pan and bake for 35-40 minutes.
- 6. Check for doneness by sticking a long toothpick into the middle of the bread. If the bread is still doughy, drop the temperature to 350 F and bake for additional 10 minutes.
- Makes 1 loaf.
- Cool at least 5 minutes before removing from pan.
- My husband LOVED this banana bread.
