Upside-Down Vegetarian Apple And Cinnamon Pie
- 3 whole Eggs, Separated
- 3 tablespoons, 1 teaspoon, 2-1/3 pinches Water
- 1/2 cups Sucanat
- 1 cup Rye Flour
- 2 Tablespoons Unrefined Oil
- 1 Tablespoon Lemon Zest
- 1 teaspoon Baking Soda
- 1 teaspoon Vanilla Extract
- 1 Tablespoon Rum Extract
- 3 teaspoons Ground Cinnamon
- 2 whole Apples, sliced
- Separate egg yolks from the whites. Whip egg whites until they have a foamy texture.
- In a separate bowl, add water and mix it with sucanat until sucanat is dissolved. Pour this over the beaten egg whites.
- Add the other ingredients except apples and blend well together using a hand mixer.
- Put some parchment paper on your cake/pie form. Place the sliced apples on the bottom and pour over the pie mixture.
- Place in the oven at 180u0b0C or 356u0b0F for about 50 minutes.
- Let it cool for a little while, turn it upside down and serve!
