Southern Delight Macaroons
- 4 c. corn flakes
- 1 (3 1/2 oz.) can flaked coconut
- 1 c. chopped pecans
- 1 c. sugar
- 3/4 c. light corn syrup
- 2/3 c. evaporated milk
- 1 Tbsp. butter
- pinch of salt
- Mix corn flakes, coconut and pecans in large mixing bowl.
- Mix sugar, syrup, evaporated milk, butter and salt in a medium size saucepan.
- Cook over low heat, stirring constantly, until sugar is dissolved.
- Stirring constantly, continue cooking over medium heat to 234u0b0 (soft ball in cold water) or about 10 minutes after mixture comes to a full boil.
- Remove from heat.
- Gradually pour over corn flake mixture, stirring to coat well.
- Stir gently so as not to break corn flakes any more than necessary.
- Drop by teaspoon onto greased baking sheet, shaping into mounds lightly with fingers and allow to set.
- Yields 38 to 40 macaroons.
