Strawberry Buttermilk Pancakes
- 1 cup Buttermilk
- 2 whole Eggs, Lightly Beaten
- 3 Tablespoons Butter, Melted
- 1 cup Flour
- 1-1/2 teaspoon Sugar
- 1/2 teaspoons Kosher Salt
- 1-1/4 teaspoon Baking Soda
- 1/2 cups Fresh Strawberries, Sliced
- In a medium bowl, combine buttermilk, eggs, and melted butter. Whisk until thoroughly combined. In another bowl, mix together flour, sugar, salt, and baking soda. Pour the wet ingredients into the dry ingredients. Stir carefully until just combined.
- Heat a large skillet or griddle over medium heat. Once pan is warmed, grease with butter and pour on batter. Dot with some strawberries. When batter starts to bubble and the bottom side is cooked to a golden brown color, flip and continue cooking. When bottom side is golden brown, remove from heat.
- Eat with syrup, powdered sugar, honey or sugar.
