Valentine’S Tea Cookies

  1. Preheat oven to 350 F.
  2. In a mixing bowl using an electric mixer, cream the butter and sugars for 3 minutes, on medium speed. Add the egg; mix for 1 minute on medium speed. Add the vanilla; mix for 1 minute on medium speed.
  3. Sift the flour, cornstarch, baking soda, and salt together in a small bowl. Gradually add the flour mixture to the other ingredients and mix on low-speed, just until combined. Use a silicone spatula to mix in the M&M's.
  4. Use a cookie scoop or a tablespoon to make rounded dough mounds, and then dip the top of them in the sparkling sugar. Place on a Silpat or parchment paper lined baking sheet leaving about 2 inches between them.
  5. Bake for 10 minutes.
