Vanilla Bean And Honey Kefir Panna Cotta
- 2 cups Plain Milk Kefir
- 1 teaspoon Vanilla Bean Powder
- 1 Tablespoon Honey
- 2-1/2 teaspoons Gelatin Powder (I Use Great Lakes Brand)
- 1/4 cups Hot Water
- 3 cups Chopped Strawberries
- Note this also requires several hours of refrigeration time, so plan ahead.
- Place the kefir in a saucepan and whisk in the vanilla and honey. Put the heat on low and gently warm the kefir. We just want it to get warm. Any hotter and we risk killing the beneficial bacteria. Keep whisking the honey and vanilla until well incorporated.
- Put the gelatin powder in a bowl and pour the hot water over it. Stir it until it is dissolved.
- While mixing the kefir with a whisk, slowly pour the gelatin mixture into the warm kefir. Whisk the mixture together until it is smooth and creamy.
- Pour into small glasses and chill in the fridge to let it set for a few hours or overnight.
- Place chopped berries on top of the panna cotta before serving.
- Notes: Instead of chopped berries you can top with a berry puree. To make a strawberry puree, blend 2 cups of strawberries with 1/4 cup of apple juice. Drizzle over the top.
