Strawberry Cream Cheese Pie
- 1 envelope unflavored gelatin
- water
- 2 (8 oz.) pkg. cream cheese, softened
- 1 c. sugar
- 3 Tbsp. frozen orange juice concentrate
- 1 Tbsp. orange liqueur
- 1 pt. strawberries
- 1/4 c. currant jelly
- 1 graham cracker crust
- In a small saucepan, sprinkle gelatin over 1/2 cup water; let stand for 1 minute.
- Cook over medium heat, stirring constantly, until mixture is clear.
- Cool to room temperature.
- In a large bowl, beat cream cheese until fluffy.
- Gradually add sugar, orange juice concentrate, orange liqueur and gelatin mixture; mix well. Spoon into graham crackers crust, smoothing the top.
- Cover and refrigerate until firm.
- Hull strawberries and cut in halves; arrange over pie.
- In a small saucepan, place currant jelly and 1 teaspoon water.
- Stir over low heat until smooth.
- Spoon over strawberries.
- Refrigerate until ready to serve.
