Strawberry Cream Cheese Pie

  1. In a small saucepan, sprinkle gelatin over 1/2 cup water; let stand for 1 minute.
  2. Cook over medium heat, stirring constantly, until mixture is clear.
  3. Cool to room temperature.
  4. In a large bowl, beat cream cheese until fluffy.
  5. Gradually add sugar, orange juice concentrate, orange liqueur and gelatin mixture; mix well. Spoon into graham crackers crust, smoothing the top.
  6. Cover and refrigerate until firm.
  7. Hull strawberries and cut in halves; arrange over pie.
  8. In a small saucepan, place currant jelly and 1 teaspoon water.
  9. Stir over low heat until smooth.
  10. Spoon over strawberries.
  11. Refrigerate until ready to serve.
