Stir-Fry Chicken With Vegetables

  1. Heat oil in skillet or wok.
  2. Add garlic and zucchini and cook over high heat, stirring quickly and frequently, until zucchini is cooked but slightly crisp, about 1 minute.
  3. Add the chicken, onion and bell pepper. Cook, stirring occasionally, until the chicken is heated through and the vegetables are tender-crisp (2 to 3 minutes).
  4. Add the tomatoes and soy sauce; cook, stirring constantly, until mixture is thoroughly heated, 1 to 2 minutes more.
  5. Makes 2 servings.
