Pecan Pie Muffins
- 1 cup packed light brown sugar
- 1/2 cup all-purpose flour
- 1 cup chopped pecans
- 2/3 cup butter, softened
- 2 eggs, beaten
- 1 cup mashed bananas (2-3)
- 1 can (6 oz) frozen unsweetened orange juice concentrate, thawed
- 2 eggs, beaten
- 1 cup raisins
- 1 cup chopped walnuts
- 2 cup sifted flour
- 1-1/2 teaspoon pumpkin pie spice
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2/3 cup sugar
- 1/3 cup butter
- 2 eggs
- 2 tablespoons milk
- 1 teaspoon vanilla
- 1 cup flour
- 3/4 cup whole wheat flour
- 1-1/4 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup mashed bananas
- 2/3 cup flaked coconut
- 1/2 cup miniature chocolate chips
- 1 cup sugar
- 1 cup brown sugar
- 2 cup flour
- 1 stick margarine
- 2 eggs, beaten
- 1 cup sour milk or buttermilk
- 1 teaspoon baking soda
- Pour into a well-greased and floured pan.
- Sprinkle the 3/4 cup reserved crumb mixture on top before baking.
- Bake at 350 degrees until top is golden brown and cake tests done.
- (Glass pan -- 325 degrees.)
