Raw Broccoli Salad
- 2 cups Broccoli Flowers
- 1 whole Carrot, Cut In Matchsticks
- 1 strip Celery, Cut In Matchsticks
- 1 Tablespoon Fresh Ginger, Minced

- FOR THE DRESSING:
- 2 Tablespoons Fresh Lemon Juice
- 2 Tablespoons Soy Sauce (unpasteurized If Possible)
- 2 Tablespoons Balsamic Vinegar
- 2 Tablespoons Agave Nectar
- 1 pinch Salt
- 2 Tablespoons Peanut Butter (or Almond Butter Or Tahini)
- 2 Tablespoons Peanuts For Garnish (depending On Nut Butter That You Use)
- Mix the cut vegetables together in a bowl.
- In another bowl, whisk the dressing ingredients together until well blended.
- Pour the dressing over the salad and stir well.
- Allow to sit covered, in your fridge, for 30-60 minutes, stirring occasionally.
- Garnish with roasted peanuts and serve.
