Bread And Butter Pickles(Microwave)
- 10 small cucumbers, sliced thin
- 2 medium onions, sliced
- 1/4 c. canning salt
- 1 1/2 c. vinegar
- 1 c. sugar
- 1 Tbsp. mustard seed
- 1 tsp. turmeric
- 1 tsp. celery seed
- 1/2 tsp. ginger
- 1/2 tsp. peppercorns
- Combine cucumbers and onions in a large bowl.
- Layer with salt.
- Cover with ice and let stand 1 1/2 to 2 hours.
- Drain and rinse.
- (Prepare canning jars and lids according to manufacturer's instructions.)
- Combine vinegar, sugar and seasonings in a large microwave-safe bowl.
- Microwave on High, uncovered, 6 to 7 minutes or until mixture boils, stirring once during cooking time.
- Add cucumbers and onions.
- Return, covered, to microwave and continue cooking on High until mixture returns to boil, about 12 to 14 minutes, stirring twice during cooking time.
- Carefully ladle into hot sterilized jars, leaving 1/4-inch headspace.
- Process jars of pickles for 10 minutes in boiling water bath.
