Spicy Tortilla Soup
- 1 small chopped onion
- 2 to 4 cloves garlic
- 6 c. broth
- 2 (14 oz.) cans chopped tomatoes
- 1 (4 oz.) can chopped green chilies
- 3 Tbsp. chopped cilantro
- 1/2 to 1 tsp. cumin
- 2 c. water
- salt and pepper
- 1 tsp. sugar
- juice of 2 limes
- 1/2 to 1 c. shredded chopped chicken
- 1/2 to 1 c. shredded Monterey Jack cheese
- 1 c. broken tortilla chips
- Boil chopped onion, garlic and broth.
- Add tomatoes, chilies, cilantro and cumin.
- Stir, cover and simmer 30 minutes.
- Add water, salt, pepper, sugar, lime juice and chicken.
- Bring to a boil.
- Add cheese and chips when ready to eat.
- Put cheese and chips in a bowl and fill with soup.
- Put cilantro on top.
