Brownie Ufo Cookies
- 1/2 pounds, 7/8 ounces, weight Flour
- 1 teaspoon Baking Powder
- 1/8 teaspoons Sea Salt
- 4-1/4 ounces, weight Butter
- 5-1/3 ounces, weight Sugar
- 1-7/8 ounces, weight Brown Sugar
- 1 whole Egg
- 1 Tablespoon Light Molasses
- 1 teaspoon Vanilla Extract
- 3/4 ounces, weight Cocoa Powder
- 5/8 ounces, weight Toasted Coconut (optional)
- 1. Preheat oven to 175u0b0C (350u0b0F) and line two baking sheets with parchment paper.
- 2. Whisk together flour, baking powder and salt.
- 3. Cream butter and both sugars.
- 4. Mix in the egg, molasses and vanilla extract.
- 5. Gently fold in the flour mixture until barely combined.
- 6. Divide 200g of dough into a small bowl and mix in the cocoa powder until combined.
- 7. Roll both the light and the dark dough into 12 balls each.
- 8. Coat the dark balls with toasted coconut and wrap the light dough around them.
- 9. Bake for 15-16 minutes until slightly golden around the edges.
- 10. Cool on baking sheets for 5 minutes and transfer to cooling racks to cool completely.
