Vegan Chocolate Energy Balls
- 100 grams Dark Semi Sweet Chocolate, At Room Temperature
- 135 grams Medjool Dates
- 7 Tablespoons Walnuts
- 4 Tablespoons Sesame Flour
- 1 teaspoon Ground Flax Seeds
- 1 Tablespoon Vanilla Extract
- 40 grams Roasted Hazelnuts
- 2 Tablespoons Cocoa Powder, For Rolling
- Break chocolate into small pieces and add to a food processor. Process on high speed until finely ground. (Make sure chocolate was at room temperature before starting.)
- Add dates to food processor and process on high until everything is combined. Add walnuts, sesame flour, flax seeds, and vanilla extract and process again until a dough begins to form.
- Transfer mixture to a bowl. Form mixture into balls, adding a whole hazelnut in the center of each ball. Repeat with remaining mixture. If desired, roll the balls in cocoa powder.
