The Best Vegan Chocolate Chunk Cookies
- 2/3 cups Cup Earth Balance Vegan Butter Sticks, Softened (or Coconut Oil, Or Regular Butter If Not Vegan)
- 2/3 cups Brown Sugar
- 2/3 cups Sugar
- 1/2 cups Almond Milk
- 2 teaspoons Vanilla
- 3-1/4 cups Whole Wheat Pastry Flour
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 1/2 teaspoons Salt
- 10 ounces, weight Chopped Dark Chocolate (or Chocolate Chips)
- Cream softened butter with sugars until light and fluffy. Mix in almond milk and vanilla.
- Add flour, baking powder, baking soda, and salt. Mix until combined; dough will be soft. Fold in chopped chocolate. Refrigerate dough 20 minutes.
- Preheat oven to 350u0b0F. Drop dough into rounded tablespoons on prepared cookie sheet. Bake 10-12 minutes. Remove from oven and cool 5 minutes on baking sheet before transferring to cooling rack.
