Portuguese Custard Tarts
- 250 grams Sweet Puff Pastry
- 500 milliliters Whipping Cream (35% Fat)
- 200 grams Granulated Sugar
- 8 Egg Yolks
- 1 Lemon, Zest Only
- Glass Sugar, For Sprinkling
- Cinnamon, For Sprinkling
- Preheat oven to 250u0b0F.
- Roll out the puff pastry and cut circles about 3 inches diameter. Place circles at the bottom of a nonstick cupcake pan. Refrigerate while you prepare the filling.
- Add whipping cream into a big pot and whisk until there are no lumps of cream. Add sugar, yolks and lime zest and mix until sugar is dissolved.
- Place pot on the stove over medium heat. Stir constantly until thick. Remove from heat and let custard cool.
- Fill puff pastry cups with custard. Bake 15 minutes, or until set.
- Chill tarts. Garnish with glass sugar and cinnamon.
