(Vegan) Mocha Coconut Banana Bread
- 1 cup Mashed Very Ripe Bananas, About 3
- 1/4 cups Canola Oil
- 1 Tablespoon Instant Coffee Dissolved In 1 Tablespoon Hot Water
- 1/2 cups Plus 2 Tablespoons Brown Sugar, Packed
- 1 cup All-purpose Flour
- 1 cup Whole Wheat Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoons Kosher Salt
- 2/3 cups Sweetened, Flaked Coconut
- 2/3 cups Milk Chocolate Chips (or Any Dairy-free Chocolate Chip To Make It Vegan)
- 1 Tablespoon Cinnamon Sugar (optional)
- Caramel Sauce, To Serve
- Preheat the oven to 350 degrees F. Lightly grease and flour a 9 x 5-inch loaf pan.
- In a large mixing bowl, whisk the bananas, oil, coffee and sugar briskly to combine. In a separate bowl, sift together the flours, baking soda, and salt. Dump into the banana mix. Use a wooden spoon to mix until the wet and dry ingredients are just combined. Fold in the coconut and chocolate.
- Transfer the batter to the prepared pan and sprinkle with cinnamon sugar if you'd like. Bake for 45 to 60 minutes. The top should be lightly browned and a knife inserted through the center should come out clean. Remove from the oven and let cool for 20 minutes before transferring out of a pan and onto a wire rack to cool completely. Slice and lather it in caramel sauce and enjoy!
