Vegan Peanut Butter Apple Bars

  1. Cookie base:
  2. Combine peanut butter, honey, coconut oil (or other oil) and vanilla extract. Add flour, baking soda and salt and stir to combine. Chill in the freezer for about 10 minutes.
  3. Apple Filling:
  4. In the meantime, peel, core and dice the apples. Toss with flour, brown sugar, lemon juice and cinnamon. Let sit for about 10 minutes.
  5. Crumble Topping
  6. In another bowl, combine crumble topping ingredients. Use your fingers until you get coarse crumbs.
  7. Preheat oven to 350F.
  8. Press peanut butter cookie base into a 9 x 13 baking pan. Layer on apple filling, then top with crumble topping. Bake for 30-40 minutes, until edges are golden brown.
