Vegan Peanut Butter Bread
- 2 cups All-purpose Flour
- 1/3 cups Brown Sugar, Packed
- 4 teaspoons Baking Powder
- 1 teaspoon Kosher Salt
- 1/4 teaspoons Cinnamon
- 1/2 cups Chunky Peanut Butter (not Natural)
- 1-1/2 cup Soymilk
- Preheat the oven to 375u0b0F. Grease a loaf pan and set aside.
- Whisk together the dry ingredients. Place the peanut butter in a small bowl and melt it in the microwave, for approximately 30 seconds. Add the soymilk and melted peanut butter to the dry ingredients. Mix just until combined. Pour into the prepared pan.
- Bake for 35 to 45 minutes or until a toothpick comes out clean. Allow the loaf to cool for 5 minutes in the pan then remove to a cooling rack. It is easier to slice once cooled but dig in right away if necessary.
- Note: The soymilk used was vanilla and not low fat.
