Three-C Bread

  1. Stir together flour, sugar, baking powder, soda, mace and 1/2 teaspoon salt.
  2. Combine eggs, oil and milk.
  3. Add to dry ingredients.
  4. Mix well.
  5. Stir in carrots, coconut and cherries. Pour into three 21 ounce pie filling cans.
  6. Bake in a 350u0b0 oven for 1 to 1 1/4 hours (or pour batter into one greased 9 x 5 x 3-inch loaf pan and bake in a 350u0b0 oven for 45 to 50 minutes).
  7. Cool in cans 10 minutes.
  8. Cool completely.
  9. Wrap and store overnight before slicing.
