Three-C Bread
- 2 1/2 c. all-purpose flour
- 1 c. sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. ground mace
- 3 beaten eggs
- 1/2 c. cooking oil
- 1/2 c. milk
- 2 c. shredded carrots
- 1 1/3 c. flaked coconut
- 1/2 c. chopped maraschino cherries
- Stir together flour, sugar, baking powder, soda, mace and 1/2 teaspoon salt.
- Combine eggs, oil and milk.
- Add to dry ingredients.
- Mix well.
- Stir in carrots, coconut and cherries. Pour into three 21 ounce pie filling cans.
- Bake in a 350u0b0 oven for 1 to 1 1/4 hours (or pour batter into one greased 9 x 5 x 3-inch loaf pan and bake in a 350u0b0 oven for 45 to 50 minutes).
- Cool in cans 10 minutes.
- Cool completely.
- Wrap and store overnight before slicing.
