Vegetable And Feta Flan
- 4 whole Eggs
- 1 cup Cream
- 1 teaspoon Salt
- 1/2 teaspoons Pepper
- 1/2 teaspoons Nutmeg
- 1 Tablespoon Butter
- 2 teaspoons Olive Oil
- 4 whole Mushrooms, Sliced
- 1/4 cups Red Pepper Finely Chopped
- 1/4 cups Broccoli, Finely Chopped
- 3/4 cups Feta Cheese, Crumbled
- 1 pinch Dried Basil
- 1 whole Bottom Pie Crust
- Thoroughly beat together eggs, cream, salt, pepper and nutmeg with a fork. Set aside.
- Heat oil and butter over medium heat. Add vegetables and saute for 5 minutes.
- Line a deep pie plate with pie crust. Sprinkle vegetables over bottom. Sprinkle feta over the vegetables. Pour egg mixture over vegetables and feta. Sprinkle with basil.
- Bake at 350 for 30 minutes or until beginning to brown.
