Banana Nut Fruit Cake
- 6 ripe bananas
- 1 stick butter, sliced
- 1/2 c. Wesson oil
- 4 eggs
- 3 c. plain flour
- 2 c. sugar
- 1 1/2 tsp. cloves
- 2 1/2 tsp. cinnamon
- 1 tsp. allspice
- 2 tsp. soda
- 1 1/2 c. red and green candied cherries
- 1 1/2 c. red and green candied pineapple
- 1 c. seedless white raisins
- 1 c. chopped dates
- 2 c. chopped pecans
- 2 Tbsp. banana extract
- Mix together bananas, sliced butter, oil and eggs.
- Beat by hand.
- There will be lumps of butter and bananas.
- Mix flour, sugar, cloves, cinnamon, allspice and soda in a paper bag.
- Do not sift.
- Combine the two mixtures.
- Add remaining ingredients.
- Bake in loaf pans, lined with wax paper in a 300u0b0 oven for 1 1/2 hours. Cool, remove from pan and remove wax paper.
