Barbecued Pork Chops
- 6 thick pork chops
- 1 large onion, chopped
- 1 large bell pepper, chopped
- 2 Tbsp. brown sugar
- 2 Tbsp. lemon juice
- 1 Tbsp. Worcestershire sauce
- 1 tsp. chili powder
- 1/2 tsp. salt
- 1/2 tsp. mustard
- 1 c. water
- 1 (8 oz.) can tomato sauce
- Trim all but a thin layer of fat from chops.
- Heat frying pan, then add chops.
- Brown chops on both sides quickly.
- Remove chops. Saute onions and bell pepper in drippings for 10 minutes or until tender.
- Drain off any fat.
- Add brown sugar, lemon juice, Worcestershire sauce, chili powder, salt, mustard and water; mix well.
- Place chops in single layer in pan.
- Add tomato sauce around chops and cover pan.
- Simmer 45 to 60 minutes until tender.
- Place chops on heated platter.
- Skim fat from sauce and spoon sauce over chops.
- Serves 6.
